Tonight’s Dinner – 3 Cheese Chicken Enchiladas June 28, 2006

1/3 cup oil
9 corn tortillas (really however will fit in your baking dish or dishes)
1 can mild enchilada sauce (I am going to use 2 cans tonight cause I didn’t think there was enough with 1 can)
4 oz cream cheese
4 oz sour cream
1/4 tsp salt
1/4 tsp cumin
1/4 tsp pepper
2 cups shredded chicken (I use the pre-packaged taco seasoned shredded chicken from the meat dept. for convenience, thus omitting the salt, pepper and cumin)
2 cups shredded Monterey Jack cheese
2 cups shredded Cheddar cheese (I always use more cheese than what is called for. Our family loves cheese)
Sour cream for topping
Guacamole for Topping (if desired)
Heat oven to 350. In a skillet, heat oil over medium heat until hot. With tongs, dip each tortilla in hot oil, turning quickly to soften, remove from oil and set aside. (I place them on a plate lined with paper towels so catch the excess oil)
In a large bowl, stir together cream cheese and sour cream until smooth, stir in seasonings, stir in chicken, 1 cup of Jack cheese,and all cheddar cheese. Mix well.

Pour 1/2 of the enchilada sauce on the bottom of a greased pan. (I use a 13×9 glass baking dish) Place chicken mixture in a tortilla and roll. (says to use 1/3 cup for each, but I just eyeballed it.) Place the roll seam side down in pan. (you will want to place them rather close together cause I could fit 9 in my pan.) Cover with the remaining enchiladas sauce.

Bake for 25 minutes uncovered. Sprinkle remaining jack cheese to top of each enchilada and bake for 3-5 more minutes. Garnish with sour cream and guacamole if you wish.
I serve this with refried beans and Spanish rice. It is sooo yummy!
As a side note: This dish refrigerates well and is good the next day! I haven’t tried freezing it yet so I don’t know about that.

Dining Room June 26, 2006

This is our dining room. The color on the walls is Fireweed and Abalone Shell. I have a cream table cloth on the table with sage green placemats. The centerpiece is a copper candle holder with various heights of Burgundy candles surrounded with copper/red stones.

This photo shoes my grandmothers china hutch. I have my good ivory china with the gold rims in it. If you make the photo bigger, you can see the bird cage floral thing I did by the bedroom door. On top of the hutch I have more baskets, my grandmothers angel and some ivy and flowers.
Here is another view of the hutch and the pictures we have on the wall. All three are floral pictures done in sage green and a goldish tint.

 

Living Room – part 1 June 22, 2006

I have always tried to make my home comfortable. I have tried to make it pleasing to both my husband and myself. When guests come over, I want them to feel at home, at peace and comfortable.


This is a photo taken from the entryway. Our living room houses the normal living room stuff – a couch and love seat, 2 end tables, a coffee table and a TV. I used to have 2 shelves and a pretty framed floral photo above the sofa, but I just wasn’t’ happy with it and wanted something different, above is the result of that.
Here is a close up of the end table that is between the two sofas. On top of the table you will find a lamp, a few coasters for drinks, a small basket with the remotes, an angel figurine, my tin church and a scripture plaque that reads “Commit thy way unto the Lord”. Beneath the table is a basket that has 2 extra pillows and some folded up extra fabric that matches the decor. Yours truly made the floral arrangement. Pretty much (ok all) the floral arrangements in my home, I did myself. It is something that I enjoy doing)


Here is the other side of the large sofa with a view of the coffee table.

Above is the other end table. You will find a ceramic tea set a scripture box, another floral arrangement, more coasters and a hymnal. Below it is my magazine basket. I only subscribe to 2 magazine and that is really all I buy, Real Simple and Cottage Living. Inside the basket there is a rolled up, leather, checkers/chess game.

 

Living Room – part 2 June 22, 2006

Here is our fireplace. It is set at an angle from the main wall. My husband painted the fireplace wall as well as the dining room wall a really muted red color called fireweed. The rest of it is painted in a really pretty pinky tan color. (I don’t remember the name of it.) The angles on the mantel were made by my great grandmother. The basket you see to the left is the cat’s toy-box. The basket on the right holds our DVD’s. The flower arrangement was made by yours truly.
This is a close up of the fireplace. We placed a mirror on the back wall and then filled it with different heights of candles. It really looks beautiful at night! This is my husbands pride and joy, his big-screen. He really worked hard last year and this was his present to himself. It really makes movie-watching very enjoyable! The two baskets hold our DVD’s. I still need to add some bows to the handles of the one on the right. Our scripture verse hangs above the TV as a gentle reminder. I saw this sign in one of those country shops and just had to have it! My mom bought it for me as a gift.

Living Room – part 3 June 22, 2006

Here is our sliding glass door that leads out onto the balcony. I strung some roses around the door and put my Love letters above it. I normally leave the blinds cracked a bit during the day because the cat likes it and we have a bird feeder out on the balcony.

Little Miss Sophie June 10, 2006

Our dear kitty, Sophie, has decided to pee on our bed. The reason it happened – Where we keep her little box is in the laundry room behind the door. Well when the door is opened all the way, she can’t get in to the box. Well, it was left open all night and all day today so that when we got home, the poor thing couldn’t hold it anymore and she must have went on the bed. I am assuming that she went on it, a short time before we got home as the spot was still wet.

How do I get the smell out, without buying a new mattress. (way to pricey!) I tried to clean it some with water, and then I bought some stuff especially made for cats that you put on the area and it takes the smell away. I am waiting for it to dry but I can still smell it. Do any of you have any ideas? Thanks so much!

 

Our Office – Redoing June 9, 2006

Well, it’s official. My hubby wants to turn the room into a music room. You can see the before photos here.
We will be keeping the keyboard and the bass guitar. We just purchased an amp for the guitar and it will be here Tuesday. The piano chords poster will be staying and I need to find a bass guitar chords poster. I am going to frame them in those poster frames.

We will be taking out the desk, desk chair, bookcases, chairs, table and the sewing machine. We are looking for a futon and a coffee table to fill the space. Eventually my hubby would like to purchase an electric drum set. (that will be a few years away cause we need to save up for that purchase. The one he wants is about $5,000. Ouch)

He is wanting to keep the walls green. I am unsure of this color though. He is thinking the color scheme will be green, black and white. I am thinking the walls would look better tan. Let me know what you think.

Here are some pictures of our kitchen. It is done in a Rooster theme. Our condo is a pretty much open floor plan so I had to go with colors and schemes that compliment one another.

Above the cabinets I have put ivy and then my collection of baskets and my collection of copper molds.

 

Our Home – Office – Misc. Room June 7, 2006

This is our office/music room/misc catch all room. This room is a complete mess! We are wanting to turn it into either a music room or a spare bedroom. But we aren’t sure what to do with it! All I know is that the desk, chair and bookshelves are going to his dad as soon as he comes up from Alabama to get them. Do any of you have any ideas on what to do with this room? Whatever we do the piano and the bass stay.
